The Black and the Gold

This is the perfect summer salad.  It is quick and easy to prepare and stands up well in an outdoor picnic scenario.  Its vibrant colours create an irresistible invitation to dig in.  Most importantly it is very tasty and chock full of all the goodness that can be found in beans and vegetables.



1 can black beans, drained and rinsed

2 cups frozen corn kernels, cooked and cooled

1 red or green sweet pepper, seeded and chopped

¼ large onion, chopped

Handful fresh cilantro, minced

2 tbsp lime juice

1 tbsp lemon juice

¼ tsp ground cumin

1/8 tsp cayenne

1 tbsp white sugar

Salt, pepper to taste


Mix all ingredients together and serve as is.

    I tried this, Deb, and it’s really delicious. I gave Liam the recipe after he had a few bites and wanted more. He’s hoping the kids will like it too.
