Satisfying Salsa

 

Salsa, with its profusion of colourful vegetables, should be at the top of the list of healthy foods.   It needn’t be paired with less wholesome foods such as cheese and sour cream.  Here is a simple recipe that delivers a salsa that is as delectable as it is healthy.

 

INGREDIENTS:

1/3 cup fresh cilantro, finely chopped

1 tomato, finely chopped

1 small sweet onion, finely chopped

1 small sweet red or orange pepper, finely chopped

½ cup frozen corn

Soft tortilla wraps (or corn tortilla chips if preferred)

1 tbsp rice vinegar

1 tbsp lime juice

1 tsp sugar

1 tsp green Tabasco Sauce

 

DIRECTIONS:

Place chopped vegetables in a bowl.

Slice soft tortilla wraps into wedges and bake in a 350°F oven until crisp.

Mix the rest of the ingredients together.

Serve with toasted tortilla wraps or corn tortilla chips.
