Grilled Asparagus

How would you feel about a recipe that is healthy, delicious, colourful and quick and easy to prepare?  Sounds perfect, doesn’t it?  Here is one of our favourite vegetable side dishes.

 

 

Aspargus spears with tough ends removed

1 small zucchini, cut in rounds

1 small onion, cut in rings

½ small bell pepper, cut in thin slices

6 cherry tomatoes

6 cloves garlic, sliced

4 tbsp sun-dried tomatoes, cut in strips, oil drained off

2 tbsp fresh chives (or 1 tbsp dried)

2 tbsp Italian seasoning

2 tbsp nutritional yeast

1 tbsp basil

Salt and pepper

White wine or apple juice

 

Preheat oven to 450°F.

Place asparagus, zucchini, onions, bell pepper and tomatoes in a bowl.  Mix in garlic, sun-dried tomatoes, chives, Italian seasoning, nutritional yeast and basil.  Toss until well-mixed.

Add a small amount of white wine or apple juice if needed to moisten vegetables enough that the spices cling to them.  Add salt and pepper to taste.

Spread mixture out on a cookie sheet and place in the preheated oven for about 10 minutes or until the asparagus is bright green.
